No matter what, I always try to end the lesson with something good, because I find the last few minutes of the lesson are what the student takes home with them. If they take home something negative, it is less likely that they will feel the desire to play or practice or look forward to the next lesson. It all starts from fundamentals such as having good posture, listening to correct intonations, and learning bow technique. I believe the more students play scales and etudes such as Kayser, Wolfhart, Kreutzer,and Suzuki, the better they would become as a musicians in the future. As the students master the basics and get to know their violins, we'll move on to more advanced topics such as music theory and music history giving them all the knowledge needed to play complex pieces within just a few years of holding their violins for the first time. For piano beginners I use the Faber book series. I prefer these books because it gives a mixture of theory and technique that I think is essential to learn at an early stage. For violin beginners I prefer to use the Suzuki Method books. These books are great because they get the student playing quickly, while still introducing the foundations of basic theory for reading music.
