For beginning students who are children, I typically start with Hal Leonard's Essential Elements for violin students and piano adventures for piano students. Once the student has progressed to have a grasp of the fundamentals, I will begin to introduce solo repertoire appropriate for their first recital performance. I move at a very quick pace, but I have my students set their own goals. While I will select the literature for the student, I want them to feel successful when they are working with me.
