For my string students, I typically use Hal Leonard's Essential Elements at first, and then I introduce the Suzuki Method for solo repertoire once they have progressed on their instruments. For my vocal students, I find what type of music my student is interested in, and I then recommend a voice book that we will pick repertoire from. I find that they provide a good breadth of repertoire suitable for students who are new to their instruments. For more advanced students, I use standard repertoire for their instrument, making sure each piece teaches them to hone a skill while also preparing them for big auditions. I use a variety of methods and techniques. I have training in the Suzuki Method, as well as more traditional methods of violin instruction. In my lessons knowing scales and arpeggios will be important. I also teach about keys and time signatures early on.
