Theory will not dominate the conversation unless the student shows a high interest for this. Some basic theory as it related to chords, chord progressions, scales, and music in general will certainly be beneficial. My approach to teaching is to make sure my students have fun while they're learning and growing. For adult students I seek to find what the students is most interested in (classical, jazz, rock, bass nova, etc.), and then go from there in terms of finding repertoire and creating my own custom lessons plans, centered around the student's goals. For beginning students who are children, I typically start with a method book geared specifically for children.
