For beginning students, especially young children, I always use the Hal Leonard's Essential Elements Books 1-3. After some time, when the student has more of a grasp on the fundamentals and reading music, then I will bring in some basic solo repertoire and music of their choice (Disney, Star Wars, etc.) to inspire them to continue and feel motivated to learn.
