I have experience participating in, working with, and conducting college level choirs and I am still gaining experience. I have also passed Piano Proficiency in my undergrad education. This proficiency test covers major and minor scales in all twelve keys in two octaves with proper fingering, playing a piece from memory, sight reading open score (a four-part choral work), and I have had to harmonize a melody using the three basic I, IV, V7 chords in a major key and i, iv, V7 chords in a minor key. They want to feel like they have something to show for the time that they were the class session. . if we have an hour session and at the end of the session they can go out and show off what they learned then they will. It be as motivated to come back.... For instance, if a student seeks to be a opera singer as opposed to a worship leader, the training needs to be more pointed towards classical pieces and Arias instead of learning church music and how to engage a crowd.
