My approach to teaching is to start simple and break down topics and themes into smaller goals that help the student feel a sense of accomplishment and eager to learn more. By letting the student's inspiration lead the way I can successfully guide them to reach those goals that they might not have had before starting the lesson. I like to begin all my students on a combination of technical studies and enjoyable/familiar melodies. This will help them learn the fundamentals in a rewarding way, because as they progress they will continue to learn new songs week after week. This is much more rewarding than checking of series of technical exercises. Additionally it is important to have both small goals to achieve each week and large goals to achieve over a number of months, so my students can be aware and proud of their progress over time. For adults, I would continue using these books but at a higher level with supplemental material on the side, which may include solo repertoire appropriate for them and Hanon's Virtuoso Pianist exercises (a few, not all). For voice students, I try to find out what it is they are interested in singing; I am comfortable with all genres but it should be noted that I am classically trained and can work more easily and comfortably for those wanting to sing classical music, musical theater, and church related music.  A student must enjoy what they are working on in order to progress.
