I have most students start with Essential Elements for fundamentals. Then I progress to solo and duet repertoire when the time a student is able to grasp counterpoint and rhythm well. Adult students can often move faster due to being able to understand the math behind music. I also try to incorporate theory and history and culture with my lessons. After introductions have been made by me and the student, I usually ask a goal of theirs that they would like to accomplish during their studies with me. From there, I usually focus on fundamentals while I try and figure out where they are as a player and cater my instruction to what I discover.
