If the student has never played violin before, I start by just working on posture. I may have the student hold the violin and bow but not play. This is to make sure the setup is a good starting point. I would then work on some pizzicato, just plucking the strings to get a feel for the instrument and the sound. For pianists, there are so many different method books, I recommend for beginners Faber Method Series for younger beginners, for adult beginners we can start with Alfred's All in One Method for Adult Beginners. I have used Alfred's Series, Piano Adventures, John Thompson's Series, Bastien Series, Playtime Piano Series (also Faber). For more intermediate students I would use books that are a collection of different types of baroque and classical pieces, and First Lessons In Bach, and for more advanced students solos and concerti from composers such as Chopin, Beethoven, Mozart, LIszt, etc. Read More

For beginner-intermediate violin/viola students I find this to be very effective, and would supplement this with a variety of technique exercises as well as something of personal interest to each student (folk style, pop, etc).
