I use the song-by-song method: I have my students choose a number of songs they want to learn, and I teach them how to play those songs one by one, learning the basics of guitar along the way. For intermediate students, I would use the same method, but encourage them to choose more complex songs. This method teaches the student guitar playing techniques without bogging them down with confusing music theory and scales (although we can learn those things later after the student progresses).
