I begin with the fundamentals of music theory that you will need to begin playing your instrument, and then I like to get straight into learning songs as quickly as possible. I've seen the face of an 80 year old grasping the ukulele and finally getting to hear himself playing his own songs, and seeing the glow in his eyes like a child.
