I hold my students to high expectations so when they meet their goal they actually kill two birds with one stone (ex: figuring out a difficult passage in school music while progressing in technique exercises). For beginning students who are younger, I prefer starting them with beginner method books and ear training. Brain and physical development can proceed at very different rates. I believe in the constant testing of the student's readiness of various musical elements such as absolute pitch, rhythm, reading, finger control, note reading, attention span, interest in music, intelligence, etc. Finding each child's strength and weakness will be the key to determine the path of the repertoire they will be playing. My methodology is inspired by the Suzuki method, which believes that learning music is similar to how humans learn to speak first, and write later. In the end, music is a type of language. Having said that, I always have a conversation with my students, and/or their parents, to learn what artists they listen to, what their favorite songs are and what goals they want to achieve.
